Southeast Asian Wine dinner
We excited to announce another back-to-back dinners collaboration with Craig Perman of Perman Wine Selections featuring the foods from Southeast Asia.
Joining us is a chef back fresh from two months in Vietnam, excited to share the flavors and dishes with us.
We will be preparing a ten course tasting menu inspired by the street food of countries such as Vietnam, Thailand, and Cambodia with wine pairings by Craig Perman.
Due to the demand of these dinners we will offer back-to-back nights featuring the same menu. While the menu will be the same each night, Craig will pair different wines each evening.
Friday night, Craig will be pairing the food with an eclectic mix of wines from around the world. Consider it a world tour of wine, all of course with the goal of creating the best pairing.
Saturday night’s pairings will focus on the natural match of Australian wine with the cuisine of Southeast Asia. Some of the greatest examples of food from these culinary countries can be found within Australia, and its no coincidence that the wines of this diverse country match with these bold flavors.

To complete your
reservation you must make two separate payments:
- First to
X-marx for the food through this page for $100, tax and gratuity included
- Second to
Perman Wine Selections for the wine pairings for $35
Once you have
completed the payment for the food portion of the evening through Eventbrite please contact Craig by e-mail or phone at craig@permanwine.com or 312-666-4417 to pay for the wine portion of the evening. You must complete both payments to secure your reservation for this event.
You will be prompted to let us know of any dietary restrictions (religious, allergy or life-choice) when you pay. It should be noted that the menu is highly seafood and meat orientated and will contain some spicy dishes.
Space is very limited and reservations are processed in the order in which they are received.

classically trained chef takes old-school knowledge and new-school techniques
and combines them into multi-course tasting menus created to excite your palate and
challenge your senses without the normal boundaries and restrictions of the
public restaurant. Many dishes are one time only, never to be made again, making each XmarX event a truly unique dining experience.
All events are BYOB and seating is communal.
